Thought i'd give a couple tips when cooking turkey. I'm sure that some of you probably know already, but for those who have never cooked a turkey before, here ya go! Wink

1. When refrigerating, allow 5 hours per pound defrosting time
2. In cold water, you need to put the turkey in a container and the turkey should be completely covered with cold water. Change the water at least every hour, allowing one hour per pound to defrost
3. If you are purchasing a frozen, prestuffed turkey, DO NOT THAW! Cook from frozen state and check product label for further instructions.

Here are some tips to cleaning the turkey:

- Remove neck and giblets from body cavity
- Rinse turkey well inside and out with cold water. Thoroughly pat dry with paper towels
- Always wash hands thoroughly in hot soapy water before preparing foods and handling raw meat
- Do not let raw meat juices touch ready-to-eat foods either in the refrigerator or during preparation
- Keep cutting board and utensils in good repair as they can harbour bacteria inside cracks and crevices

That's really good that you bring that up Stacey, because cleaning it is VERY IMPORTANT!

Kinda common sense, but make sure you wash everything very well so you don't carry any of the bacteria from the turkey to your other food!
