Try this greek salad as well
Ingredients:
4 large tomatoes --chopped
1 Spanish onion --chopped
1 small cucumber --pared chopped
2 green bell peppers --chopped
24 mushrooms --quartered
24 black olives
1 cup Feta cheese
1/2 cup olive oil
2 tablespoons lemon juice
2 tablespoons white wine vinegar
1 tablespoon oregano leaves
1 teaspoon salt
1/2 teaspoon cracked black pepper
Directions:
In a large mixing bowl, combine the vegetables, olives and cheese.
In a small mixing bowl, blend together the remaining ingredients. Pour over salad and toss to coat.
Serve at once.
This recipe for Classic Greek Salad serves/makes 4 |

Here is a nice tuna macaroni salad for ones who are looking to make a quick meal.
1 (12 ounce) package elbow macaroni
1 (6 ounce) can tuna, drained
2 stalks celery, chopped
2 tablespoons chopped sweet onion
1 (10 ounce) can baby peas, drained
1 cup mayonnaise
2 tablespoons sweet pickle relish
salt and pepper to taste
3 hard-cooked eggs, quartered
1 pinch paprika, for garnish
DIRECTIONS:
Bring a large pot of lightly salted water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Drain and rinse under cold running water.
In a large bowl, stir together the macaroni, tuna, celery, onion and peas. Mix in the mayonnaise, relish, salt and pepper. Garnish with egg wedges and a sprinkle of paprika. Cover and chill for at least 1 hour before serving. |

Here is a nice seafood salad its tasty.
2 tablespoons light mayonnaise
1/3 cup fat-free or light sour cream
Juice from 1/2 lemon
1 cup shredded, cooked crabmeat or imitation crabmeat (about 1/3 pound)
1 cup bay shrimp, cooked (about 1/3 pound)
1/2 cup chopped celery
1/4 teaspoon salt (optional)
1/4 teaspoon freshly ground pepper (add more to taste)
2 tablespoons sliced black olives
1 green onion, chopped
6 cups chopped Romaine or green leaf lettuce or spinach

1. Combine light mayonnaise with sour cream and lemon juice in medium bowl.
2. Stir in crab, shrimp, celery, salt, pepper, olives, and green onions. Chill at least 1 hour.
3. Serve each serving of seafood salad on a bed of 2 cups of lettuce greens. |

Here is an olive garden italian dressing recipe, hope everyone likes it.
1/2 cup white or red wine vinegar
1/3 cup water
1/3 cup vegetable oil or olive oil
1/4 cup light corn syrup
2 1/2 tablespoons grated Romano cheese
2 tablespoons dry pectin (used to thicken jelly)
2 tablespoons beaten egg or egg substitue
1 1/4 tsp. salt
1 tsp. lemon juice
1/2 teaspoons minced fresh garlic or 1 tsp. garlic powder
1/4 teaspoons dried parsley flakes
pinch of oregano
pinch of crushed red pepper flakes, or to taste
Combine all of the ingredients with a mixer on medium speed for 30 seconds -Or- in a blender on low speed for 30 seconds -Or- use a wand mixer on low speed for 30 seconds. Chill at least 1 hour.
Serve over mixed greens or use as a marinade. I like to add the hot peppers in the salad that the restaurant uses. It tastes closer to the original that way. |
