Hi Ya'll
My wife and I are going to a dinner party this weekend, and we are in charge of bringing a salad. Just wondering if any of you have any good summer salads. She wanted me to post on here to see if we could get some cool ideas  |

my mom makes an incredible taco salad which is great for the summer. I will call her tonight and get back to ya on that |

Okay, so here is the recipe
1 cup of grn pepper
1 cup of red pepper
1 cup of tomato
1 cup of onion
1 cup of cheese
1 cup of drained kidney beans
frito chips, and dress it with catalina salad dressing
This makes a big salad... but you can decrease the amount of stuff if you want to make a smaller one. Tell your wife not to put the dressing on the salad until right before you eat, because the chips will go soggy.

| Another good summer salad is broccoli salad. Not sure exactly the ingredients, but I know it has nuts, raisins, onions, and feta cheese in it. Maybe check it out on the Internet and you may be able to find a recipe |

We tried out the taco salad last night and we loved it, so I think that's what we are going to go with.

I have a cesar salad recipe I hope some people may find useful.
1 tsp. salt, 3 eggs, 1 1/2 tsp. sugar, 3/4 tsp. dry mustard, 3 tsp. lemon juice, 1 tsp. parmesan cheese, 4-6 cloves crushed garlic, 6 tsp. wine vinegar, 1c. plus 2tblsp. oil, 6 drops tabasco sause, 6 drops worcestershire sauce, 3tbsp. olive oil.
mix in blender and refrigerate. when serving salad add anchiovies to salad. add to taste to salad. |

I do have a recipe that i created on my own.
a splash or two of canola or sunflower oil, one splash of maggi and several splashes of wine vinager
mix well. This recipe is for 1 or 2 servings |

| I think you put too much maggi sauce in the dressing try putting in half the maggi I think it will be better then. |

Another very easy balsalmic dressing that I know how to make is really easy.
you just mix a bit of oil with a pure Balsalmic vinagrette, add a little bit of sugar and volia!
depending on how sweet you like it and how strong you can adjust the measurements but i just make it from scratch... i dont know the exact measurements  |

I have a good Greek salad recipe
1 med. head iceberg lettuce, broken into bite-size pieces
1 lg. cucumber, skinned and sliced thin
2 lg. tomatoes, cut into bite-size pieces
1 c. Greek feta cheese, cubed
A hand full of Greek black olives
1 med. onion, sliced thin
1 1/2 c. julienne beets
1 can anchovy filets, drained and cut into thirds
1/2 c. olive oil
1/4 c. white wine vinegar
1 tsp. dry mustard
Salt and pepper to taste
In a large wooden bowl, place the lettuce, cucumbers, tomatoes, cheese, olives, onions, beets, and anchovy filets. Mix oil, vinegar, mustard, salt and pepper together thoroughly. Pour the dressing over the salad and toss gently. Serves 6-8. |
